Is it going to be a real server doing real work, or a home box? This
makes a pretty large difference.
If it's to be a home box, then I'll pass on the lesson I learnt when I
built a dual Xeon box three or four years ago:
Don't bother. Flog the CPUs on eBay and spend the cash on a normal
single CPU C2D or Quadcore system instead. It'll be much cheaper, will
suck less power, run cooler, and be a better domestic box entirely.
