I've googled to try & find the answer & even found a related bug, but no

Anyone know: 1) how I can get Nautilus to browse the actual CD and 2)
how I can replace Sound-Juicer with Rythmbox or something else[1]?

[1] I've tried changing System|Preferences|Removable Drives & Media to
Rythmbox from Sound-Juicer, but SJ still defaults.

did you try right-clicking on the .cda file itself and setting the properties correctly? there you can associate what app opens these types of files.
