I have seen xorg start up successfully without an xorg.conf file. I
think xorg has the ability to probe for itself. There may also be an
ubuntu script to help create the initial file.
One thing to try is remove your xorg.conf file, and start x, then look
at /var/log/Xorg.0.log to see what xorg probed for and found.
