You get different integrated apps, different default look and behavior.  
Or, you could do what some have done and install both if you have the 
room.  The main difference is the KDE window mangler.  You may want to 
visit these sites to see differences.

Keep in mind that you can run KDE apps in Ubuntu, and Gnome apps in 
Kubuntu.  Synaptic is perfectly capable of installing (for example) 
Amarok and whatever dependencies it has in Ubuntu even though it is a 
Kubuntu app.

My advice is to try them both, if possible.
