Yes, you can (at least, it worked on 9.x versions)!!

You can overwrite the name of the existing labels.
Copy your language file to your profile directory, and remove all but the strings you want and the following:

; Opera language file version 2.0
; Copyright ¬ 1995-2004 Opera Software ASA. All rights reserved.
; Created on 2004-12-22 16:56
; Lines starting with ; (like this) are comments and need not be translated

[Info]
Language="en"
; The string below is the language name in its own language
LanguageName="English"
Charset="iso-8859-1"

[Translation]
...

You must add this to your profile/opera6.ini under [user prefs]:
Language File= ...\profile\english.lng
Where "..." is the path to your profile directory.
By doing it this way, the change will not be overwritten during upgrades.
If you change the main language file, it will be overwritten with each
upgrade.
