It is possible to show, or hide, the various columns for Status, From,
Subject and so on when looking at the mail headers. Is it possible to
change the order in which these columns are displayed. Ie Subject,
From, Sent instead of From, Subject, Sent?

It is possible to edit opera.ini file.
This is by default
[Columns]
Mail View=0, 25600, 1, 1, 40760, 1, 2, 88498, 1, 3, 21298, 1, 4, 12118, 1,
5, 51200, 1, 6, 16524, 1
I changed it:
[Columns]
Mail View=0, 25600, 1, 5, 51200, 1, 2, 88498, 1, 1, 40760, 1, 3, 21298, 1,
4, 12118, 1, 6, 16524, 1
