First, here are a few workarounds that should help you:
- When viewing the trash folder, there should be an "Undelete" button you can use. If it's not, customize your toolbar. - You can select the stuff you *do* want to keep in the reply *before* clicking "Reply". In this case, the reply window will start with the selected text only.

Second, uh, I think I'm confused now...When in a Reply window, there shouldn't be a "Delete" button you can click. If you customized one, it's probably the wrong one and somehow still refers to the original mail. Use the "Delete" from the context menu instead, or simply use your keyboard (Backspace, Delete, Ctrl-X - take your pick).
