The lower the number, the lower the layer order. So, sprite 1 will be at the bottom, sprite 2 above sprite 1, sprite 3 above sprite 2 and so on. There is no way to set a background image other than putting the graphic at the bottom most channel. You can set the background colour of the stage in the Property Inspector.
