Upgrading from CFMX7 Standard to CMFX8 Enterprise

We've just invested in a new server and the decision was made to upgrade to 
CFMX8 Enterprise. We're currently running CFMX7 Standard on the (soon to be) 
old server.

 I know you can transfer setting using.CAR in enterprise but we haven't got 
that option - Any ideas on how to easily transfer all the settings 
(datasources, scheduled tasks etc) across to the new server / CFMX version?
